
Favorite Fruits
Here are some great ideas to help you enjoy fruit like never before! Some will make you feel like a kid again… some are great for entertaining friends and family… some are complete meals in themselves… all celebrate nature’s bounty… simply and elegantly…
Berry Bowl
Blend fresh or frozen strawberries, blueberries or any other fresh berries. Pour into serving bowls with TRC organic sun-dried mulberries and raw (unsalted) cashews.
Garnish berry bowl with a sprinkle of dried shredded coconut or some lemon zest. Enjoy for breakfast or as a desert.
Note: No added sweetener is recommended as the mulberries are quite sweet enough to carry the dish. If you do find yourself wanting more sweet, lightly drizzle some Agave nectar on top. As you continue adding more natural whole foods into your lifestyle, your taste buds should adapt so that you require less added sweetener.
Ambrosia Salad
Whenever there is an abundance of citrus available, this is our favorite solution - a traditional southern holiday dish, with a fresh twist!
1 Ripe Pineapple – peeled and cut into chunks
6 Oranges – peeled and separated into segments
1 Grapefruit – remove outer skin completely, slice thinly crosswise and cut slices into bite-size pieces.
1 lb Grapes – leave whole or halve (Raisins are a good substitute)
1 Cup Raw Pecans – chopped
Optional: 1/4 Cup Agave Nectar
1/4 tsp ground Cinnamon
1/8 tsp ground nutmeg
Garnish: 1 Cup dried shredded coconut
In a large bowl, combine all ingredients. Mix together well, garnish with coconut, and chill 1 hour before serving.
Watermelon Salsa
2-3 cups chopped seeded watermelon
1 cup chopped fresh pineapple (optional)
1/2 cup chopped onion
1/4 cup chopped fresh cilantro
2 Tbs lime juice
1 tablespoon chopped jalapeno pepper (or to taste)
1 Dash Himalayan Crystal Salt to taste
In a large bowl combine ingredients; mix well. Refrigerate, covered, at least 1 hour to blend flavors. Stir before serving.
Banana Papaya Pudding
Blend 1 banana (fresh or frozen) and 1 Cup fresh papaya pieces until smooth. Pour into serving bowl, and add some pieces of The Raw Choice Chili Lime Mango or chopped Tropical Fruit Mix.
Stuffed Peaches
Cut peaches in half and remove seed. Brush peaches with balsamic vinegar and grill or broil 2–3 minutes on each side. Remove to platter or individual serving plates. Stuff each half with cashew cream, or cream cheese, or raw goat cheese.
Drizzle with Spiced Nectar (To 1 Cup Agave Nectar, add 1 tablespoon cinnamon, 1 tsp nutmeg, 1 tsp star anise.)
