Guacamole
1/2 Cup Pumpkin Seeds
4 Hass Avocados
1/2 cup Green Onions - chopped
2 Tbs Lemon Juice – fresh squeezed
4 leaves Basil
Salt to taste
Water
Blend pumpkin seeds in a small hand blender into a powder. Combine peeled, seeded avocados with all ingredients in a blender and blend until smooth. Alternatively, place all ingredients in a mixing bowl and mash and mix using a fork for a chunky guacamole.
Avocado Mayo Spread
1 large avocado
1 cup pine nuts
1 tbs. lemon juice
2 tbs. apple cider vinegar
1 tsp. Himalayan Crystal Salt
6 medium pitted dates (pitted)
1/2 clove garlic (pressed)
Blend all ingredients in a small food processor or blender until creamy
Herb Cashew Spread
1 cup Raw Cashews
1/2 Lemon – juice of
1 Tbs Garlic powder
1 tsp Salt
1 Tbs fresh rosemary or thyme or oregano
Blend all ingredients in blender with a little pure water until smooth. Enjoy with Crackers, in veggie wraps, or use in recipes in place of cheese.
Note: This is a very simple and versatile recipe that you can get creative with. Try adding different herb or spice combinations. Add veggies such as spinach for a tasty twist on creamed spinach. Add 1/4 cup of chopped red peppers to change the color and flavor. Try adding some jalapeno or chipotle pepper
Black Bean Hummus
A spin on traditional chick-pea hummus but just as tasty.
2 cups cooked black beans, drained
3 tsp lemon juice (or to taste)
1/4 cup sesame Tahini
2 cloves garlic, pressed
1 tsp cumin
1 tsp paprika
2 Tbs extra virgin olive oil
2 tsp Himalayan Crystal Salt
2 Tbs pure water
1/8 inch jalapeno pepper (optional)
Combine all ingredients in food processor until creamy. Taste and adjust seasonings to taste. Serve with tortilla or pita chips. (1 Serving is about 2 oz.)
Spinach Dip
4 Cups Spinach
1 large Avocado
1/4 tbs lemon juice
1/2 tsp Salt and other seasoning blends (experiment!)
Blend in food processor until smooth. Enjoy with veggies or chips.
Zesty Zucchini Hummus
1 medium Zucchini
1/3 Cup Raw Pistahcios or Almonds
3/4 cup raw tahini
1/2 cup raw sesame seeds (hulled)
2 large garlic cloves - pressed
1/2 Cup Lemon juice
3 tbs olive oil
1-2 tsp Crystal Salt
1/8 inch fresh jalapeno pepper (no seeds) or 1/4 tsp cayenne pepper
1 tsp paprika
1 tsp ground cumin
Grind sesame seeds then pistachios separately first until fine. Add all ingredients to food processor and blend until smooth, adding a little water as necessary. Makes 4 servings.
Salsas
Corn: 1 Cup Fresh Corn
1 Cup Chopped Tomatoes
1/2 Cup Onion - diced
1/2 Tbs chopped Jalapeno Pepper
2 Limes Juiced
Salt, cilantro to taste
Mango: 1 Cup Ripe Mangoes (peeled, chopped)
1 Clove Garlic –minced
1 handful Cilantro
1 Tbs Lime Juice
Salt to taste
Coarsely chop and combine ingredients for each recipe. Allow flavors to marinate for as long as possible before serving.
